The first vegan cake I ever made and everybody loved it! I spotted the biggest health-freak I know going for seconds, and everybody wanted the recipe… A keeper! A double-decker cake with apricot jam in the middle… You can, of course, do half the recipe for one smaller cake, or swap the apricot jam for another flavour… I personally find that apricot works better because the cake’s texture is reminiscent of malva pudding, which is traditionally served with apricot jam.
